Ámaz, led by chef Pedro Miguel Schiaffino, is a restaurant with a larger purpose: to introduce the biodiversity of the Amazon to the world. Its contemporary and sustainable vision brings the ingredients, flavors and cultures of one of the most biologically diverse regions on the planet to the table. It was built by immersing itself in the Amazon and living alongside the communities who safeguard its ancient knowledge.
